This is what I cook when I don't know what to cook... SUMMER EDITION!
#Summer days are long, but dang it if dinner time doesn't sneak up on me! This is one of my tried and true, fan favorites, that I can throw together in less than 15 minutes, with minimal clean-up

My Summer Favorite! It is my simple #Tomato, #Basil, #Mozzarella & #Quinoa #Salad with a Balsamic drizzle. The nutty, but healthy quinoa provides you with a bit more filling meal to help you fuel those workouts, without making you feel carb-loaded. I toss in a mix of roasted tomatoes and fresh, to create an explosion of flavor in your mouth!
Summer Tomato, Basil, Mozzarella & Quinoa Salad
For the Grocery List:
1 carton of Grape Tomatoes (or any small delicious pop-in-your-mouth tomato!)
1 Mozzarella Ball - cut into bite-size pieces
1/2 Cup Basil- Cut into Ribbons
1 bag of frozen Steamable Quinoa
1 Large Roma Tomato - Cut into 1-inch pieces
Salt/Pepper
Extra Virgin Olive Oil
Balsamic Glaze
Section 2: Toss it all Together
Preheat the oven to 375 degrees
Place Grape tomatoes on a baking sheet. Toss with extra virgin olive oil, salt, and pepper. Roast for about 10 minutes. (They should be bursting!)
Cook the quinoa per the directions. (If you can't find frozen, you can use the boil-in-a-pot kind. I prefer the microwavable because it's EASIER and less cleanup!)
Meanwhile, prep all other ingredients (chop basil, mozzarella, etc.)
In a bowl, add cooked quinoa, roasted tomatoes, fresh tomatoes, mozzarella, and basil.
Drizzle extra virgin olive oil, and balsamic glaze.
Season with Salt and Pepper
